Can it really be...3 in one day?

I made 4 loaves of delicious Zucchini Bread - here is the proof!



1 ~ for my work friends

1 ~ for Hank's work friends

1 ~ for the family

1 ~ for the freezer

And the mess is all clean too!

Recipe card was made using a background cut out from my Spiritual Journey Week 4 freebie,
available in the forum at Plain Digital Wrapper. Framed with two frames, one by Meridith Fenwick,
and one by Rhonna Farrer, from Designing with Digital CD.


Here is the recipe for anyone else who is being invaded by these green squash, and would like
to make some delicious bread. My secret is the rum extract - shhhhhhh...don't tell!

To make only 1 loaf, use the measurements in the parenthesis.

Zucchini Nut Bread

4 loaves (1 loaf)

6 (1 1/2) cups flour
6 (1 1/2) tsp. Cinnamon
2 (1/2) tsp. Nutmeg
2 (1/2) tsp. Allspice
2 (1/2) tsp. Salt
4 (1) tsp. Baking Powder
2 (1/2) tsp. Baking Soda
8 (2) eggs, beaten
3 (3/4) cups sugar
1 (1/4) cup brown or dark brown sugar
6 (1 1/2) tsp. Vanilla extract
2 (1/2) cups vegetable oil
2 (1/2) tsp. rum extract
6 (1 1/2) cups shredded zucchini


1/2 to 1 1/2 cups walnuts (optional)

Preheat oven to 350 degrees.
Mix dry ingredients in one bowl, set aside.
Beat eggs with sugar, oil and extracts.
Add shredded zucchini.
Mix in dry ingredients until fully
moistened. Spoon into greased bread pans.

Bake for 45 minutes to one hour,
until toothpick inserted comes
out clean.

Two Posts in one Day???

I know - what's up with THAT - LOL!!! Here are two more pages from last night. One of them uses a ribbon from a new set I am working on - I just love this little cabinet - it's in the corner of my kitchen now and I use to hold dish towels and candles. :) Isn't it the cutest?




The other doesn't use anything of my own, but I did grow and cook the giant zucchini - and boy we are giving yellow squash and zucchini to everyone we know - they just don't stop growing! Want some? LOL?? Guess I'll have make zucchini bread later today!

Bits-n-Pieces

These are couple pages from the Family Cookout at my nephew's house last weekend - we all had a great time! I usually have a hard time scrapping with my own kits, but I managed to add a few bits and pieces - hence the blog title!

This is my nephew's wife and good friend Darcie - isn't she a sweetie!

This is my nephew and his son - little Seth - he is such a cutie pie!

This set has been in the works for some time, and I finally got around to finishing it up!


The next couple weeks will be crazy here at the Rafferty house as my boys get ready to go back to school. Henry is 21 now (OMG can he REALLY be 21?) and he will be moving with his girlfriend to and apartment near the college they both attend. First apartment so I'll be loading him up with all our hand me down furniture and kitchen supplies! I will be sad to see him moving out though. It's a big step for both us.

My younger son, Brian is 17 - and this is his senior year of HS. Once Henry moves out of the basement - well, he can't wait to move down there with all his guitars! His old room will be turned into a Library/Den and we'll all have more space. I can finally organize my craft room!

Ok - I'll be sending codes for CT members so you can play with the new items!

A new page from Mary


I used a lot of Donna's designs on this page.
Grungy Graphiti papers, Breezy Butterflies, Manila postage frame from Forget Me Not.
Ribbon, from Fresh and Airy, recolored. Sequin from Pink Daydreams, recolored.
I did this page for the ADSR challenge 5. This was a very tough challenge for me.
But I am thrilled with the way this page turned out.
